You’re right about …
You’re right about burning muscles. When you eat, a certain percent of the carbs are converted to liver glycogen, (the longer term storage of glucose), blood glucose, and glucose stored in the muscles. You first use up a lot of the blood glucose, and before it is completely used up, the you start converting liver glycogen to glucose, then you start breaking down muscle after a long fast in order to produce ketones to supply energy to the brain. Bad way to go!

I just read (for …
I just read (for the second time) Eat To Live by Joel Fuhrman, MD. It’s a really good, inexpensive book that has a lot of great nutritional information in it. It’s not gimmicky or a fad diet. He explains the downfalls of the typical American diet and how different whole foods are beneficial. I even highlighted important parts so I could use it as a reference. I think you would like it.
